Special Peking Duck Menu For Holiday or Celebration

This year, we celebrate my mom 68th Birthday with Peking duck menu. Isn't that sounds delicious! Yes, it is. Peking Duck menu is originally Chinese food and in Thailand, it usually will be available to find this menu at Chinese Restaurants in a big city like Bangkok or Chiang Mai. My hometown is in the countryside, wouldn't have Chinese restaurant. So, if we be able to get at the Chinese restaurant in a big city one day, this menu would be our first choice to order. However, over here in USA, I usually prepare this menu for a big celebration like this weekend holiday; Memorial Day, 4th of July, Christmas Eve, or New Year Eve whichever holiday you would prefer to have this menu


Preparing Peking Duck menu by Pitsuda's Kitchen

I usually serving this menu with sweet flavor dipping sauce, mashed potato, and roasted asparagus or steamed young broccoli would also go well with this menu. If it was in Thailand, the Peking duck menu would serve with Jasmine steam rice.

Peking duck menu will marinade with herbs and it is always make my whole house smell delicious everywhere with this marinade sauce for Peking duck. The flavor of the sauce taste sweet from honey and molasses, all the spices will reduce some of the duck smell if you don't like the smell of the duck then add more portion of the spices. Now let's me show you how to prepare this big meal for our celebration!



Menu Ingredients Serving for 6

This main dish menu is serving on the table with mashed potato, roasted asparagus, and steamed broccoli.



Peking Duck Ingredients

  • 12 pounds od Duck

  • 6 tablespoons of Honey

  • 4 tablespoons of All 5 Spices

  • 2 tablespoons of Molasses

  • 2 tablespoons of Brown Sugar (I use Coconut Sugar for more nutritions, substitute for healthier as you prefer choices)

  • Pinch of Salt and Black Pepper to taste

  • Sliced Potatoes and Carrots


Peking Duck Preparation

  1. Sliced potatoes and carrots and placed at the bottom of the cast iron pot. (if you don't have cast iron pot, you can use baking sheet, ceramic pan or turkey baking pan)

  2. Rinse a duck and clean well then dry with paper towels

  3. Then prepare marinade sauce. In a small bowl, added honey, molasses, all five spices, brown sugar, salt and pepper. Mixed well until everything corporate.

  4. Rubbed the duck with marinade sauce and let it set for about an hour or two

  5. Preheat oven at temperature of 350 Fahrenheit degrees.

  6. Sliced some potato and carrots and place at the bottom of a cast iron pot.

  7. Place the duck over the potato and carrot sliced.

  8. Roasted for about 45 minutes.

  9. Then turn the duck from bottom to top to let it cook over the bottom side for about 45 minutes or until certain temperature you prefer.

  10. If you need medium rare, the temperature inside the duck should be around 130 degrees. If you want to fully cooked, the temperature should be around 150 degrees. It might need to cook a little longer to get 150 degrees.

*Duck usually have a lot of fat came out after I roasted it and I will scoop the duck fat out to use and put in a glass container, I use duck fat to rub cast iron pan or for others cooking.


Duck Dipping Sauce Ingredients

  • 1 (8 oz.) glass container of Peach Spread

  • 1 tablespoon of Molasses

  • 1 tablespoon of Sriracha Sauce (I used Chili Powder)

  • 3 teaspoons of All Five Spices

  • 2 teaspoons of Sesame Oil

  • Pinch of Salt and Black Pepper to taste


Duck Dipping Sauce Preparation

In a small bowl, added all ingredients and mixed well until everything corporate. Then cook in a little pot for about 5 minutes at low heat. After it done remove from the stove and serving in a dipping sauce bowl.




Due to we celebrating special Birthday for my mom after all. So, I did some a little bit decoration. I set up our dinner table and add some fun decoration on the wall to surprise her and here is how happiness she was when she see all the little decoration with love for her. It's unique and warm and cozy little party inside our house. She said at least this year she got a chance to celebrate her birthday with her daughter and her granddaughters.
