Thai Tea also known as Thai Ice Tea or we called "Cha Yen"(ชาเย็น) in Thai. This is a cold drink that made from Thai tea powder, sugar, and added half & half before serving. It is not only the drink taste good but also the color looks really amazing as you see at the picture below.
This drink is original from Thailand. It is popular drink and is served in many Thai restaurants with Thai desserts. It tastes thick flavor of sweetness and cold from the ice cubes. I usually prepare this drink during summer that can cool down summer heat and refresh with sweetness, plus made at home Thai Tea is the best thing to start get busy in the kitchen this summer.
Menu Ingredients Serving for 4
Sweet Thai Ice Tea Ingredients
6 tablespoons of Thai Tea Powder
2 and 1/2 cups of filtered Water
1 cup of Coconut Sugar (Optional: if you prefer brown sugar, granulated sugar, monk fruit, or stevia), used less if you prefer light sweet Thai tea taste.
1 to 2 teaspoons of Half & Half (Substitute option: whole milk, less milk, 2% milk, or Carnation cream), used this portion for each glass before serving.

Sweet Thai Ice Tea Preparation
In a a deep medium size pot, added water and bring to boil water with Thai tea powder and coconut sugar at high heat for about 5 minutes, stirred well. then reduce heat to medium and let it simmer for about 10 minutes.
After 10 minutes, turned off stove and set the tea aside. Let the tea completely cool down to the room temperature.
Using a strainer with a sheet cloth and pour the tea into a clean medium bowl to take all the chunk of tea powder out.
Serving with ice cubes; placed ice cubes into a serving glass about 3/4 of the glass then poured Thai tea into the serving glasses about 3/4 of the glass.
Then poured half&half over the tea which using about 1 to 2 tablespoons of half&half per serving glass and put straw before serving.

*Another way of prepare this Sweet Thai Ice Tea
Put Thai tea powder in a square sheet cloth and tie with twine. Then using this Thai tea in the sheet cloth boiled in the water for about 10 to 15 minutes with sugar. After done, took out the tea out and let it cool down before serving with ice cubes and half&half. This way is easier if you would prefer.
Tip: I like to prepare this Thai Tea the night before serving with my homemade dessert like Sticky Rice Mango, Seasonal Fruity with Sweet Coconut Sauce, Thai Coconut Tapioca Pudding, Pumpkin Pie, Cream Puffs, or Cakes. I store this Sweet Thai Ice Tea in an air thigh container, if I refrigerate this Thai tea, it will last for a week but it usually won't last for a day because my family love this Thai Tea, it usually gone on the day I serving this drink with desserts.
